Summer’s hot and the kitchen’s hotter, so the Nice Girls are looking for great recipes to cool us (and YOU!) down this summer. Our contest runs from AUGUST 4TH – 17TH. We’re posting daily featured recipes on the blog from each of our Nice Girls, but we want you to participate.

Now for today’s Featured Recipe: Moscow Mule from Nice Girl Angel Payne!

Introducing…Angel Payne’s favorite cocktail in the world! So that being said, a few words about the Moscow Mule: it’s simply the most divine drink I know! I love these ginger-infused cocktails, which are best served if you have an actual copper Moscow Mule mug. (The mug infuses it with extra flavor and keep it cold.) If you simply want to try one, DON’T put it in a cocktail glass! Use a ceramic mug, if possible. Mmmm…enjoy!!

Ingredients

  • ¼ cup Club Soda
  • Generous shot of vodka (3 – 4 tablespoons)
  • 1 tablespoon ginger syrup
  • Lime wedges to garnish

Directions

  1. Combine all ingredients and gently stir in a Moscow Mule mug.
  2. Garnish and enjoy! Mmmmmm.
  3. Repeat!!! A lot!!

  1. Sexy Southwest Quinoa Lettuce Wraps
    Light, full of summer dinner goodness and gluten free.
    Easy to bring and fill lettuce wraps on a picnic. Add a nice bottle of wine and some chocolate dipped strawberries and you are all set!

    1 head of leaf or Bib lettuce
    2 cups of cooked red or white quinoa
    1 medium tomato, finely chopped
    1/2 cup canned black beans, drained and rinsed
    1/2 cup yellow or white corn kernels
    1/4 cup finely chopped red onion
    1/4 cup roasted red pepper, finely chopped
    2 tbsp. finely chopped fresh cilantro
    1/2 tsp. each salt and pepper
    1/2 tsp. garlic powder
    1 tbsp. ground cumin
    1 tsp. paprika
    1 tsp. chili powder
    1/2 cup shredded Mexican cheese (optional)

    1. Prepare and cook the quinoa according to package directions.
    2. Combine all ingredients (except for lettuce) in a large mixing bowl and stir until well combined.
    3. Wash and separate the lettuce leaves. Arrange them on a large serving dish.
    4. Fill each lettuce leaf with about 1/4 cup of the quinoa mixture.
    5. Serve immediately.
    6. Feel light and sexy after eating.

  2. A cool, sexy, refreshing desert for hot day.

    No-Bake Strawberry Icebox Cake

    2 pounds fresh strawberries, washed and patted dry
    3 3/4 cups heavy cream, divided
    1/3 cup confectioners sugar
    1 teaspoon vanilla
    1/2 teaspoon rosewater, optional
    4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
    2 ounces dark chocolate, finely chopped

    Take out a few of the best-looking strawberries and set them aside for the garnish. Hull the remainder of the strawberries and cut each berry into thin slices.

    With a hand mixer or in the bowl of a stand mixer, whip 3 1/2 cups of cream until it just holds stiff peaks. Add the confectioners sugar, vanilla, and rosewater (if using) and whip to combine.

    Spread a small spoonful of whipped cream on the bottom of a 9 x 13-inch baking pan, or a similarly-sized platter. Lay down six graham crackers. Lightly cover the top of the graham crackers with more whipped cream, and then a single layer of strawberries. Repeat three times, until you have four layers of graham crackers. Spread the last of the whipped cream over the top and swirl it lightly with a spoon. Add a few more strawberries.

    To make the ganache, heat the remaining 1/4 cup cream until bubbles form around the edges, then pour over the chopped chocolate. Let it stand for a few minutes, then whisk until the mixture is thick and glossy. Drizzle this over the layered dessert with a spoon, or transfer to a squeeze bottle and use that to drizzle.

    Refrigerate for at least four hours, or until the crackers have softened completely. Garnish with additional berries.

  3. A cool, refreshing appetizer favorite.

    Watermelon Bites
    Stack cubes of watermelon & feta on a toothpick. Top with a leaf of fresh mint. Easy, refreshing and delicious.

  4. Here’s an easy dessert to go with those drinks.
    In a bowl, crush some fresh strawberries and pour over it 1 Tablespoon of Cointreau. Put in refrigerator for a couple of hours or overnight.
    When ready to use, pour over a slice of Angel food Cake. Put a dollop of whipped creme on top.
    Serve and listen to the raves of how good this is.

  5. Despite being a vodka girl, I love a mojito to cool down a hot summer day! Yummy!!!

    Mojito –
    Ingredients:
    10 fresh mint leaves
    1/2 lime, cut into 4 wedges
    2 tablespoons white sugar, or to taste
    1 cup ice cubes
    1 1/2 fluid ounces white rum
    1/2 cup club soda
    Directions:
    1. Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

    Fresh Strawberry Shake

    Ingredients
    1/2 cup milk
    1 pound strawberries, hulled
    1 pint vanilla ice cream

    Directions
    Combine the milk, strawberries, and ice cream in a blender. Blend until mostly smooth with some pieces of strawberries remaining, 10 to 15 seconds. Divide between four glasses and serve immediately.

    I love Strawberries! ❤ They are a weakness of mine lol.
