Summer’s hot and the kitchen’s hotter, so the Nice Girls are looking for great recipes to cool us (and YOU!) down this summer. Our contest runs from AUGUST 4TH – 17TH. We’re posting daily featured recipes on the blog from each of our Nice Girls, but we want you to participate.

How?

Post your own cool-down recipes in the comment section of the featured post. The recipe can be for a drink, an appetizer, an entrée, or a yummy dessert. Each recipe you post enters you to win our GRAND PRIZE OF A $50 AMAZON GIFT CARD at the end of our contest. More recipes = more entries.

At the end of our contest, FOUR lucky readers will be chosen by the Nice Girls for second place prizes, one in each food category. BarBQ ChickenNow for today’s Featured Recipe: Dare to be Different BarBQ Sauce  from Nice Girl Dani Wade

This sauce is a great break from the traditional red barbeque sauce! Tangy and sweet, your guests will keep coming back for more. Pair with your version of potato salad and slaw for a yummy summer meal.

Ingredients

  • 6 TBSP sugar
  • 1.5 TBSP salt
  • 9 TBSP melted butter
  • 3 TBSP yellow mustard
  • 3 tsp Worcestershire sauce
  • ¾ TBSP black pepper
  • 2 small shakes liquid smoke
  • Meat of choice, but tastes great on chicken, pork, or country style ribs

Directions

  1. Mix sugar, salt, and black pepper into melted butter. Then whisk in mustard, Worcestershire sauce, and liquid smoke until all ingredients are thoroughly incorporated.
  2. Grill or bake meat until halfway done. Then brush barbeque sauce onto outside of meat, alternating sides. Caution: sauce will burn if left over open flame too long.

  1. Barbecued Chinese Chicken Lettuce Wraps

    Ingredients
    2 cups, 4 handfuls, fresh shiitake mushrooms
    1 1/3 to 1 1/2 pounds thin cut chicken breast or chicken tenders
    2 tablespoons light colored oil, such as vegetable oil or peanut oil
    Coarse salt and coarse black pepper
    3 cloves garlic, chopped
    1 inch ginger root, finely chopped or grated, optional
    1 orange, zested
    1/2 red bell pepper, diced small
    1 small tin, 6 to 8 ounces, sliced water chestnuts, drained and chopped
    3 scallions, chopped
    3 tablespoons hoisin, Chinese barbecue sauce, available on Asian foods aisle of market
    1/2 large head iceberg lettuce, core removed, head quartered
    Wedges of navel orange — platter garnish

    Directions
    Remove tough stems from mushrooms and brush with damp towel to clean, Slice mushrooms. Chop chicken into small pieces.

    Preheat a large skillet or wok to high.

    Add oil to hot pan. Add chicken to the pan and sear meat by stir frying a minute or 2. Add mushrooms and cook another minute or two. Add salt and pepper to season, then garlic and ginger. Cook a minute more. Grate zest into pan, add bell pepper bits, chopped water chestnuts and scallions. Cook another minute, continuing to stir fry mixture. Add hoisin Chinese barbecue sauce and toss to coat the mixture evenly. Transfer the hot chopped barbecued chicken to serving platter and pile the quartered wedges of crisp iceberg lettuce along side. Add wedged oranges to platter to garnish. To eat, pile spoonfuls into lettuce leaves, wrapping lettuce around fillings and squeeze an orange wedge over.

  2. make a brew of sweetened tea, put in a couple sprigs of mint and thin strips of lemon in each ice cube tray, pour tea in ice cube trays and freeze

  3. Gonna try this recipe this weekend. Daughter has requested I make wings for her. Sounds delicious.
